
White kvass
Description
The drink is quick and easy to prepare. 1. Take 2 tablespoons of flour and dilute them in a small amount of water. 2. Add the yeast to the same mixture, stir thoroughly, and let it sit for 7–10 minutes. 3. Mix rye and barley malt, gradually pouring in warm water. The result should resemble a liquid dough. 4. In a separate bowl, combine wheat, buckwheat, and rye flour. Mix well. 5. Make a depression in the flour mixture and gradually pour in the malt, stirring constantly. The preparation of white kvass is very similar to working with dough. 6. Gradually add hot water (using a 4:1 ratio of water to flour with malt). 7. Leave the mixture in a warm place for 4–6 hours. 8. Prepare about 7 liters of boiling water and slowly pour it in a thin stream, stirring constantly. 9. Add the yeast starter and mix everything thoroughly. You can add sugar to taste, for example. 10. Now leave the mixture overnight (for about 10–12 hours). 11. Once fermentation is complete, the homemade white kvass will be ready. All that remains is to strain it, chill it, and taste the result. Serve chilled.
