
White bread with pumpkin
Description
Pumpkin is a great ingredient because it can be served as a standalone dish or used as an addition to various dishes such as soups, baked goods, or sauces. This bread is quite simple to prepare, yet very aromatic, and the pumpkin gives it a unique flavor. Since the bread is made with a starter, it turns out exceptionally light, soft, and healthy. You can use either wheat or rye flour, depending on your preferences. Serve it cooled or slightly warm.

1. Prepare the starter: mix the starter with water and flour, stir well and cover with plastic wrap. Leave at room temperature overnight. Grate the peeled pumpkin on a coarse grater. Mix the sifted flour with the pumpkin, salt, and starter.

2. Knead the dough in a mixer for 5 minutes at speed 2. Add a little water if necessary. Transfer the dough to a greased bowl. Shape the dough into a round form and slightly smooth the surface.

3. Cover with plastic wrap and let the dough rest at room temperature for 3 hours. Transfer the dough to a floured work surface, round it up, and shape into a ball.

4. Transfer the dough ball to a proofing basket, cover with plastic wrap, and let it rest at room temperature for 1.5 hours. Transfer the bread onto parchment paper, shake off excess flour, and make several slashes on top.

5. Preheat the oven and baking stone to 200 degrees and bake for 40-45 minutes.
