White blini
Description
Delicious baked treats for the whole family. Try baking tender, juicy crepes for breakfast or afternoon tea, and bring the whole family together for tea. You can turn the crepes into a wonderful crepe cake or freeze them with a filling—cottage cheese, condensed milk, and so on. Serve them cooled or slightly warm.
Instructions
- 1
Step 1

Prepare the ingredients listed. You may substitute kefir or ryazhenka for the milk, but in that case dilute them slightly with water until they reach a pourable consistency.
- 2
Step 2

Separate the chicken eggs, dividing the whites from the yolks. Place the whites in a deep bowl, and use the yolks for another recipe. Add granulated sugar and salt to the bowl with the whites, and beat everything for about 2-3 minutes. You can also add vanilla sugar.
- 3
Step 3

Pour in milk of any fat content and mix.
- 4
Step 4

Add the premium wheat flour and gently fold it into the liquid mixture without whisking. Let the dough rest for 15 minutes to activate the gluten.
- 5
Step 5

Pour in neutral (unscented) vegetable oil and mix.
- 6
Step 6

Heat the pan on the stove and grease the bottom and sides with vegetable oil the first time. Pour in half a ladleful of batter and spread it into a round shape. Fry the crepe for about a minute on each side. Keep in mind that it will be soft at the edges, so you will need to lift it slightly to flip it.

Step 7

Place the cooked pancake on a plate and cook the rest of the pancakes the same way. Serve them warm with jam and aromatic tea or coffee. 🫖✨
