Description

Homemade pastries for tea. Classic belyashi should have a hole on top. This is not only beautiful and tasty, but also helps the meat cook thoroughly. So such a belyash can be considered "safe"!     Prepare the ingredients for belyashi. Grind a fatty piece of pork and a piece of beef through a meat grinder using a coarse grater. You will need one large or two medium onions. Let's get started!

    Dissolve salt and fresh yeast in warm water. To make the yeast activate faster, you can add a couple of pinches of sugar.

    Pour in the vegetable oil, add the flour, and knead a soft and pliable dough.

    Cover it with a cloth and place in a warm spot for 1 hour.

    While the dough is rising, prepare the filling for the belyashi. Peel the onion and chop it as finely as possible. Add the onion, salt, ground black pepper, and cold water to the meat filling. Mix the filling thoroughly.

    At the end of mixing, "beat" the meat mixture (lift it up and drop it back into the bowl several times) to make it uniform and juicy.

    After an hour, press the dough down with your hands and divide it into small balls slightly larger than walnuts. There's no need to use flour—oil the table to prevent the dough from sticking. Start shaping. Flatten a ball of dough with your fingers on the table.

    Place a tablespoon of filling.

    With one hand, take the edge of the dough, and with the other, feed the dough and pinch it at the edge, moving around in a circle. In the end, you'll have a hole in the center and little pleats around the perimeter.

    Heat the oil well, then reduce the heat to the lowest setting. Place the belyashi opening-side down and fry slowly until golden brown.

    Flip the belyashi and fry on the other side. Use plenty of oil so the belyashi fry evenly on all sides.
