
Belarusian draniki
Description
Drainiki is a delicious dish from Belarusian cuisine, which I know very well from personal experience. My grandmother (who was from Belarus) used to cook them for me very often when I was a child. And although I've long grown up and don't see my grandmother as often anymore, this classic Belarusian drainiki recipe remains one of my family's and my absolute favorites. Making these tasty drainiki is incredibly easy, and the main difference of this recipe from others is that we don't use eggs or flour, yet the taste turns out to be incredibly rich and vibrant. Step 1

First of all, we, of course, need to prepare all the necessary ingredients. So we peel the potatoes and onions and thoroughly rinse them under water.

Now divide all the potatoes into two equal parts. Grate one half on a coarse grater.

We need to grate the remaining potatoes on a fine grater or blend them in a blender until mashed. Do the same with the onion.

Then combine the finely and coarsely grated potatoes, add salt and black pepper to taste, and thoroughly mix everything until uniform.

Transfer the resulting mass into a cheesecloth and hang it over a pot—allow all the excess liquid to drain off.

Once the excess liquid has drained off, we gently squeeze the mixture by hand and remove it from the cheesecloth. Now we can start shaping the patties. I always make them thick, resembling little cutlets, but you can make them flatter—whatever you prefer.

In a skillet, heat vegetable oil and fry the potato pancakes on all sides until a crispy crust forms.

Serve the ready-made potato pancakes with sour cream or, as in my case, with a sour cream-mushroom sauce. Enjoy your meal!!!
