
Semi-sweet white wine
Description
The drink is quick and easy to prepare. Making semi-sweet white wine at home, however, is quite a labor-intensive process that doesn't tolerate haste. There's no guarantee you'll achieve exactly the wine you envisioned on the first try. Nevertheless, it's worth a try, as the value of homemade wine lies in the effort and soul you put into it, receiving in return a natural product! Good luck with your preparation. Serve chilled.

Carefully sort the grapes, removing any spoiled ones. There's no need to wash them, as the yeast needed for fermentation is present on the berries.

Transfer the selected berries into an enameled bucket and thoroughly mash them using any convenient method. When enough juice has been released, cover the container with gauze and leave it in a warm place for 5 days. Several times a day, stir the mixture with a wooden spatula.

The first fermentation is characterized by the grapes rising to the surface. Immediately strain the pulp into a colander and filter the juice through gauze into a large glass container. Add sugar, then put on a medical glove (with several small holes pricked in it) and secure it tightly with a rubber band. The bottle should be filled only up to 75% to allow room for the wine to "breathe."

After 2-3 weeks, the glove will stop inflating and deflate. Taste the wine; if it's too sour and not as sweet as you'd like, add more sugar and leave the wine for a few more weeks. When the wine's taste becomes balanced, strain it into clean bottles. Seal them and store in a cellar for 2-3 months, after which it's ready to drink!
