
Protein Cake
Description
Perfectly pairs with tea and coffee. There are many variations of meringue cake. You can make it similar to a praline cake or a Kyiv-style cake. I simply make meringue layers without any additives. To prepare the meringue cake, we will need 12 eggs. We'll separate the whites from the yolks—the whites will be used for the layers, and the yolks for the cream. Check out the recipe. Can be served with tea or coffee.

Step 1

Using a mixer, beat 4 egg whites into foam, then gradually add 0.75 cup of sugar. Beat for five minutes until stiff peaks form. Gently fold in 2 tablespoons of starch. Line a baking pan with parchment paper and shape the cake layer. Bake in the oven at 150 degrees (low heat) for 35–40 minutes.

Bake three cake layers, then carefully remove them from the pans together with the parchment paper and let cool. The layers may sink

While the last layer is baking, prepare the custard part of the cream: mix 12 egg yolks with 1 cup of sugar, add 1 tablespoon of flour (heaping) and milk. Place over low heat, stirring constantly with a whisk, and bring to a boil.

Our cake layers are ready. Let's make the cream: beat the soft butter with the cooled custard part of the cream.

Spread the cream on the cake layers and coat the sides. Decorate with chopped nuts or chocolate sprinkles. Refrigerate to allow it to soak.
