Instructions
- 1
Step 1

These are all the ingredients we will need. Take the butter out of the refrigerator in advance so it can soften.
- 2
Step 2

Rub the butter and sugar together into a smooth mixture.
- 3
Step 3

Add an egg and a pinch of salt, beat with a mixer until smooth. I managed with a spoon.
- 4
Step 4

Add the flour mixed with the baking powder.
- 5
Step 5

We also add the coconut flakes, leaving about one-sixth portion aside.
- 6
Step 6

The dough should be soft and sticky. Place the dough in the refrigerator for about 30 minutes.
- 7
Step 7

Divide the chilled dough into 14–15 pieces and roll each piece into a ball. Roll in the remaining coconut flakes.
- 8
Step 8

Place on a baking sheet lined with parchment paper.
- 9
Step 9

Bake in a preheated 160°C convection oven for about 15–18 minutes. The cookies should lightly brown; don't overbake them.

Step 10

Ready. Serve at the table.
