
Belev marmalade
Description
The dish is prepared without unnecessary complications. Belovskaya products are known for their original Russian recipes and natural ingredients. So why not try making natural apple marshmallow yourself? To prepare Belovskaya marshmallow, we will need ripe Antonovka apples (just like in the recipe for pastila). See the recipe below. The finished dessert can be served at the table.

Peel the apples, cut them into slices, and place them in a baking dish to bake for about 40 minutes.

They turn into a kind of puree.

The puree should be strained through a sieve several more times to ensure there is no debris and the jelly is free of foreign particles.

To avoid struggling with cleaning the puree, I recommend thoroughly peeling the apples and removing the seeds right at the beginning.

The original amount of apples yielded a large bowl of puree.

Transfer the puree to a saucepan, place over heat, warm up, and add sugar.

Bring to a boil and simmer for about 10-15 minutes over low heat until thickened.

Line a baking sheet with parchment paper, spread the puree evenly, and place in a preheated oven at 80°C (176°F) to dry for 2 hours. Then turn off the oven, but leave the jelly inside for another 5 hours. If necessary, you can repeat the drying process a few times until the jelly reaches the desired gel-like consistency.

Then quickly flip the tray over — and before us is a large piece of homemade Belovsky marmalade!

Inside, it is dense and almost firm. You can roll the marmalade in sugar before serving.
