
Classic Bekmes
Description
The recipe won't take much time. Ready-made bekmes can be added to tea or baked goods, some people simply eat it like honey or jam. This sweet treat is rich in vitamins and organic acids that promote healthy intestinal function. Bekmes can be stored in the pantry for up to six months. Serve chilled. Good luck!

Step 1

We thoroughly wash the grapes. Transfer them to a saucepan, add a little water, and cook until all the grapes burst and release their juice. You can help by mashing with a pestle or wooden spoon.

Strain the juice through a sieve, transfer it to a clean container, and bring it to a boil over low heat. After a few minutes, strain the juice again.

Place the juice in a double boiler and reduce it until thickened. In the classic version, about 50% of the liquid should evaporate. Proper bekmes should have a consistency similar to honey.

Place the bekmes into clean jars. Let it cool, then store in a cellar.
