
Mulberry Bekmes
Description
The dish is prepared without unnecessary complications. Mulberry (or white mulberry) bekmes is made from overripe berries, from which the juice should first be extracted and then cooked in a wide container, stirring with a wooden spoon. The consistency of the ready bekmes resembles young honey, slightly thickened and sweet. Various sweets can be made based on the obtained juice. Good luck! The finished dessert can be served at the table.

Gently but thoroughly rinse the mulberries. Remove the stems.

Now you need to extract the mulberry juice and bring it to a boil over low heat. Attention! The juice should not boil or bubble. Immediately let it settle and strain.

After 10 hours of settling, strain the bekmes through a double layer of gauze. Then, continue cooking the bekmes until half of the initial volume has evaporated. The finished bekmes should have a consistency similar to honey.

Store it in clean glass jars in the refrigerator.
