
Classic Beef Stroganoff
Description
The recipe won't take much time. Classic beef stroganoff usually takes quite a while to prepare. But this recipe has a little trick. My stroganoff is ready in just 30–40 minutes, yet the dish tastes exactly as tender and soft as if we had cooked it for over two hours. We save a lot of time, but do spend a bit more on buying high-quality, extremely fresh, and young beef tenderloin. Serve hot.

Prepare all the necessary ingredients.

Cut the beef into thin slices and lightly pound with a kitchen mallet. Then slice the beef into thin strips.

Slice the onion thinly into half-rings or quarter-rings (if the onion is large).

Heat vegetable oil in a frying pan, add the onion, and fry over medium heat until soft.

Then add the beef strips to the skillet and sauté over medium heat, stirring frequently, for 7–10 minutes. During this time, liquid will form in the skillet, in which the meat will braise, becoming increasingly tender.

Add the flour and sauté for a few more minutes, stirring constantly.

Now add the sour cream to the pan, mix well, and cook for 2–3 minutes.

Add tomato paste, season with salt and pepper to taste, mix well and simmer for 10 minutes over low heat.
