
Beef Bourguignon
Description
The dish is prepared without unnecessary complications. Many famous chefs publish their own recipes for this dish, so you can find many variations. The meat (beef) is slowly braised with vegetables in wine, and cooking time may vary from 1.5 to 8 hours depending on the version. The meat turns out extremely tender, each piece melts in your mouth, and the fibers are clearly visible. This dish belongs to haute cuisine, so it is usually prepared specifically for festive occasions. The finished dish can be served at the table.

1. Slice the pancetta thinly and place it in a preheated pot. Fry until golden brown on both sides, then transfer to a plate.

2. Wash the meat and pat it dry, then season with salt and pepper. Place the meat into the pot where you fried the pancetta, using the fat rendered from it.

3. Sear each piece until golden brown on all sides. Remove the meat from the pot and place it on a plate with the pancetta.

4. Finely chop the onion and garlic, and dice the carrot into small cubes. Place the vegetables into the pot and sauté until soft, scraping off any browned bits from the bottom of the pot that remained from the meat (this is important!).

5. Pour in the wine, broth, tomato paste, mushroom seasoning, parsley, thyme, and bay leaf. Bring to a boil over high heat, then simmer for 5-7 minutes to evaporate the alcohol.

6. Return the meat and pancetta to the casserole, bring to a boil again, then reduce the heat and place in a preheated oven at 150 degrees Celsius for 2-3 hours, covered with a lid.

7. Remove the meat from the oven, leave it on the stove.

8. Sear the mushrooms and peeled pearl onions until golden brown in a hot skillet, then transfer the vegetables to a pot using tongs. Turn on the heat and cook the dish over medium heat for about 15 minutes, until the onions are tender.

9. Melt a tablespoon of butter in a skillet, add brandy and evaporate the alcohol. Add flour and mix thoroughly. Add the skillet contents to the cauldron and mix, then immediately turn off the heat.
