1. Prepare the ingredients. Wash the meat and dry it with a paper towel, peel the vegetables. Grind the cumin in a mortar until well crushed and finely ground.

2. Make lattice-shaped cuts on the surface of the meat. Season with salt and pepper, sprinkle with cumin, and let stand for 10-15 minutes. Cut the onion into 4 parts, slice the pepper into thick strips, divide the garlic into 2-3 pieces, and cut the carrot into thick slices.

3. Quickly sear the piece of meat in a tablespoon of vegetable oil over high heat, turning it occasionally with a spatula. Grease a baking dish with oil, place the meat in it, arrange raw vegetables around it, and bake in a preheated oven (180°C) for 20 minutes. After that, pour in a glass of boiling water and continue baking for another 2 hours and 20 minutes. Increase the oven temperature to 200°C, pour beer (or the broth formed during cooking) over the meat, and bake for another 20 minutes, periodically basting the meat with the sauce that has formed in the dish.

4. After 3 hours, the meat is ready. Take it out.

5. Remove the skin from the pepper (pepper is optional for this recipe, but I like to add it), place the vegetables in a glass, pour in the broth, and use an immersion blender to turn the mixture into a smooth, thick sauce.
