Bavarian New Year cupcakes

Description

The dish is prepared without unnecessary complications. This recipe yields 30 cupcakes. The combination of white icing with blue decoration makes these cupcakes truly "wintery." Instead of cupcakes, you can also make two cakes. The finished dessert can be served at the table.

    1. Preheat the oven to 175 degrees. Line the baking pan with paper liners. If you are making a large cake, grease and flour two cake pans, then place a round of parchment paper on the bottom. In a bowl, combine egg whites, milk, vanilla, and almond extract, whisk together, and set aside. In a large bowl, mix all dry ingredients. Add butter and beat with a mixer at low speed until the mixture resembles soft, damp sand or until no large pieces of butter remain. Beat for about five minutes. Add the egg mixture in two or three parts, beating at low speed after each addition. Mix everything together for 20–30 seconds.

    2. Pour the batter into prepared paper liners or cake pans and bake for 12–14 minutes for cupcakes and 20–25 minutes for cakes. A toothpick inserted into the center should come out with a few crumbs. Let the cupcakes cool completely. To make the frosting, melt the butter in the microwave or over a double boiler. Add chopped white chocolate and stir until melted. Remove from heat and mix in milk and vanilla. Gradually add powdered sugar, 1/2 cup at a time, beating after each addition until desired consistency is reached. If the frosting is too thick, add a little milk.
