Tatar baursaki

Description

    Take a bowl and crack eight raw chicken eggs into it. Add baking soda that has been neutralized with any acid. Using a masher, beat the eggs until they turn into a homogeneous mixture.

    When the egg mixture becomes homogeneous, gradually add the sifted wheat flour in portions. Knead a firm yet pliable dough. It should not be stiff.

    When the dough is ready, transfer it to a bag or roll it into a ball and wrap it in plastic wrap. Let the dough rest for fifteen to twenty minutes.

    Then roll the dough into ropes and cut them into equal pieces about two centimeters wide. Heat vegetable oil in a cauldron, then pour in 150 milliliters of water. In batches, drop the dough pieces into the hot oil and fry, stirring with a slotted spoon. Remove the baursaks when they turn golden and double in size.

    Place the baursaki on a plate in a heap. Pour the remaining water into a saucepan and bring it to a boil. Add sugar and cook until the syrup thickens. Pour the sugar syrup over the heap of baursaki.
