I'd like to share with you how to make baursaki with kefir, as in my opinion, this recipe is the best one—baursaki turn out especially light and tender. Thanks to their ingredients and delightful taste, these wonderful doughnuts will appeal to everyone, and if you sprinkle them with powdered sugar, even children will enjoy them immensely.     Combine warm kefir, yeast, and a little sugar, mix well and let sit for 10 minutes. Then combine this mixture with the egg, salt, remaining sugar, vegetable oil, and baking soda. Gradually start adding flour. I've indicated an approximate amount of flour in the recipe, as the required amount may vary. Add flour until you obtain a soft and elastic dough. Cover with a towel and let rise in a warm place for one hour.

    Divide the dough into several portions, roll each portion into a sausage shape, and cut it into small pieces 2-3 centimeters wide. Cover them with a cloth or towel and let rest for 20 minutes.

    Next, we pour vegetable oil into a cauldron or a deep frying pan and place it over the heat. There should be enough oil for the baursaks to be completely submerged.
