
Blueberry butter
Description
A simple preservation recipe. I make this homemade blueberry butter every year—it turns into an excellent winter stash! Just keep in mind your own taste preferences: some of my household find this butter too tart, though I really like it. So just in case, you can use less lemon juice and zest—it will be sweeter. Store in a cool, dark place.

1. Wash the blueberries thoroughly, removing any small debris, and dry them.

2. Blend in a blender. Transfer the mixture to a saucepan and keep on low heat for about an hour. Then add sugar, stir, and continue on low heat.

3. After five hours, add the spices and stir into the already thickened mixture along with freshly squeezed lemon juice and lemon zest, then let sit for another hour.

4. Transfer our batter into the prepared jars and seal with sterile lids. Store in the refrigerator. Done!
