Description
The recipe I'm offering today is purely "homemade." The dough is prepared slowly, carefully, and calmly, as the sponge needs to sit overnight. Baking homemade bread is considered a form of relaxation, a process that brings pleasure and rest. The baking is ready. Serve at the table.

First, prepare the starter: crumble fresh yeast into a bowl, dissolve it in warm water until smooth, add 300 g of sifted flour, and mix well to obtain a liquid dough. Cover the bowl with a lid and let the starter sit overnight at room temperature during winter, and in the refrigerator during summer.

Sift 600 g of flour into a large bowl, forming a mound. Make a well in the center and pour in the sponge starter, 240 g of water, crumble in the fresh yeast, add vinegar, and knead the dough.

Add the remaining water, salt, and continue kneading until the dough becomes smooth and elastic.

Cover the bowl with dough with a towel and let it rise in a warm place until doubled in volume, about 1 hour.

Prepare the oven: preheat the oven to 180-200 degrees. Place a heatproof dish containing 300-400 g of water into the oven. To bake bread, you need to create a "moist" environment in the oven.

Divide the dough into 150 g pieces, shape into loaves, and make several diagonal cuts on their surface.
