1. Making this loaf is divided into several stages. First, put the grains into a deep bowl (I didn't soak the sunflower seeds, but added them directly to the dough). Bring a small amount of water to a boil and pour it into the bowl. Cover with plastic wrap and let sit for 10–12 hours (it's most convenient to do this overnight).

2. In a separate bowl, combine 110 milliliters of water and one-third of the yeast. Dissolve well. Add half of the salt and 175 grams of wheat flour. Mix thoroughly, cover with plastic wrap, and let it sit for about 12 hours (you can extend the time up to 15–16 hours) in a warm place.

3. After the 12-14 hours have passed, you can start kneading the dough. Put the remaining flour, yeast, and salt into a deep bowl. Add honey, water, and the grains, including sunflower seeds. Mix the dough thoroughly, using a mixer, for example, which works well for this purpose.

4. Add the fermented and matured dough.

5. Continue kneading until the dough becomes completely smooth. Don't worry if it sticks slightly to your hands. Cover the finished dough with a clean towel and leave it in a warm place.

6. After about an hour, gently knead the dough and fold it into a envelope shape, as when making puff pastry.

7. Roll into a ball again and let it rest for another hour.

8. The dough has risen, so it's time to shape the future loaf.

9. Shape the dough as desired and let it rest for about half an hour longer, covered with a towel or plastic wrap.

10. Now you can make shallow cuts and put the loaf into a preheated oven at 200 degrees.

11. When baking, it is better to place a container with water in the oven for the first 15 minutes to create steam. After that, remove the water and continue baking for another 20–25 minutes until done.
