
Armenian-Style Beef Basturma
Description
The appetizer is prepared quickly and simply. To make Armenian-style beef basturma, you will need beef tenderloin, one packet of salt and pepper, half a packet of khmeli-suneli, half a packet of red hot pepper, and you can also add dried garlic. This basturma takes about two weeks to prepare in total. See the recipe below. Serve with fresh herbs and sauce.

Prepare the ingredients.

Dissolve the salt in water, add the washed meat. Refrigerate for two days. The forks keep it from floating and drying out.

Then remove the meat and rinse it. You can also press it with something and set it at an angle so the water drains off.

Mix all the seasonings in one container and coat the meat thoroughly in them.

Using a needle and thread, make a loop in the meat. If the seasonings have come off anywhere, coat it again.

Wrapped in cheesecloth and tied with string. Hung from a curtain rod or beam. All that remains is to wait two weeks.
