Step 1

Sift the flour and mix with salt. Add a few chopped rosemary leaves. Beat the egg whites into a fluffy foam and add to the flour. Pour in 200 ml of water and mix. Place the dough onto a floured surface and knead for at least 5 minutes. Wrap in plastic wrap and refrigerate for 1 hour.

Wash parsley, dry it. Grind in a blender together with rosemary, bay leaf, and garlic. Add bread crumbs and oil.

Wash the lamb leg. Trim off a layer of fat and rub with salt and pepper.

Heat a large skillet over high heat with a small amount of vegetable oil. Sear the lamb for 7 minutes on each side. Let it cool slightly.

Preheat the oven to 200°C. Roll out the dough into a 0.7 cm thick sheet. Cut off and set aside one third of the dough sheet. Spread mustard on the leg, then cover with a mixture of herbs and breadcrumbs. Place the leg onto the larger piece of dough. Fold the edges of the dough around the meat. Place the smaller piece of dough on the remaining exposed part of the leg and press down with your hands.

Brush the dough with lightly beaten egg. Place the leg on a baking sheet, cover with a sheet of foil, put in the oven and bake for 1.5 hours. Brush the cooked leg with butter.
