1. As is known, lamb has a specific flavor, so it's better to cook it with spices. Some people love lamb precisely for its taste, while others try to mask it with seasonings. Either way, it's impossible to prepare the meat without marinating it. I had a lamb leg and decided to cook it in a roasting bag.

2. Cut the garlic into small pieces and make incisions in the meat. Place the garlic into the incisions, doing this all over the piece.

3. Chop the onion, add bay leaf to it (you can add a little vinegar and sugar, but it's optional). I found that marinated onion tastes better with roasted meat, especially when cooked in a bag.

4. Prepare the marinade: mix vegetable oil with salt and spices. For lamb, the best spices are coriander, mustard seeds, dried garlic, rosemary, and paprika. Combine all the spices with the oil in equal proportions and let the marinade sit for about 10 minutes.

5. Rub the meat all over with the prepared marinade. I cut the leg in half and marinate the meat from the inside. Using the same method, you can prepare any cut of lamb or other meat. Then I wrap the meat tightly with thick kitchen twine on all sides, so that the leg remains whole after roasting.

6. It is best to tie the meat with heat-resistant string to prevent it from breaking during roasting.

7. Now take a roasting bag and tie it on one end. Place the marinated onions and the ham into the center. Then tie the other end of the bag, and put the meat into a preheated oven at 180 degrees for 2.5 hours.

8. If you want to get a beautiful browned crust, carefully cut open the pouch after the specified time and leave the meat exposed for another 10 minutes at 200 degrees.
