
Lamb with herbs

The dish is prepared without unnecessary complications. This is the perfect recipe for lamb with herbs for those who prefer not to overpower the meat's flavor with spices. The stuffing gives the dish an incredible aroma, enhancing and highlighting its taste. Cheese is used optionally, as an additional ingredient. The finished dish can be served at the table.

1. First, prepare the filling. Heat a little olive oil in a frying pan and add the chopped onion. Fry until soft.

2. In the recipe for lamb with greens, you can use absolutely anything you have on hand—spinach, basil, dill, parsley, cilantro, mint, etc. Wash and chop the greens, then sauté in a pan for 2-3 minutes.

3. Place the greens in a salad bowl and cool thoroughly. Then add some grated cheese and mix in an egg to give the filling a sticky consistency. Mix well.

4. Wash the meat and dry it thoroughly.

5. Peel the garlic and cut into small pieces. Make small incisions across the surface of the lamb.

8. Carefully fold the piece in half. Season with salt and pepper to taste. To prevent the meat from losing its shape during cooking, it's better to wrap it several times with kitchen twine. Let the lamb marinate in this form for at least 3 hours, but preferably overnight.

9. Before putting it in the oven, sprinkle with lemon juice and place some fresh herbs on top for extra aroma. Lamb with herbs bakes at home for about 2 hours. When the meat is ready, remove it from the oven, cover with foil, and let it rest for another 25–30 minutes.
