First, we need to prepare the meat and vegetables, so we thoroughly wash and peel everything. Cut the lamb, potatoes, eggplant, and tomatoes into medium-sized cubes of equal size, chop the onion slightly finer, grate the carrot on a coarse grater, and finely chop the fresh herbs and garlic. In a separate bowl, mix the beef broth and tomato paste. Sprinkle the sliced eggplant with salt and let it sit for half an hour to remove its bitterness, then rinse the eggplant under running water.

Now take the prepared clean pots and start placing the sliced ingredients into them, with the meat going in first.
