
Lamb with vegetables

Peel the carrot, rinse under running water, and cut half of the carrot into small cubes.

Peel the onion and chop it as well.

Rinse the lamb and pat dry with paper towels. Heat the oil in a skillet over high heat and sear the meat on all sides until golden brown.

Add sliced garlic, onion, and carrot to the lamb and sauté for 5 minutes. Then add flour to the pan, stir, and cook for another couple of minutes.

Pour wine and some of the broth over the lamb, season generously with salt and pepper. Bring to a boil. Cover the pan with a lid or a piece of foil and braise in a preheated oven at 180°C for about 90 minutes.

In a large pot, heat the oil, then add the second portion of carrots, potatoes, and vegetable broth. Add a little salt and pepper, and bring to a boil. Cover and simmer over medium heat until the vegetables are tender, about 10 minutes.

Chop a bunch of green onions, add them to the vegetables that have been simmering in the broth for 10 minutes, and cook together for another couple of minutes.

Remove the meat from the oven, wrap it in foil, let it rest at room temperature for a few minutes, then slice into pieces. Serve with vegetables.
