For this recipe, lamb leg or any whole piece of meat will work. If using a leg, first carefully remove the bone by cutting the meat along the bone and taking the bone out. Now unfold the meat to form an even flat layer, season it with salt and pepper, and make incisions in the lamb.

Cut the prunes into pieces.

Now roll the lamb tightly into a roll and tie it with string on all sides. Rub the outside of the roll with salt and ground pepper.

Place the meat into a roasting bag, seal it on both sides, and make several punctures in the bag to allow steam to escape.

Transfer the meat in the pouch to a baking sheet and place it in a preheated oven at 200 degrees for 2 hours. You can also add potatoes to the baking sheet to roast alongside, thus preparing a side dish for the lamb at the same time.
