Lamb with artichokes

Description

The dish is prepared without unnecessary complications. I didn't invent this recipe myself—I overheard it from a chef at a Cretan restaurant. There, the tables and stoves are set up right on the street, so it's very convenient to watch the cooking process :) So, if you follow my photo recipe, you'll end up with something similar to what I tasted in Crete. The dish is extremely delicious. Artichokes may not look very attractive, but they are incredibly tasty. And perhaps in no other dish do artichokes shine (in terms of flavor, of course) as well as they do here. Just writing about it makes my mouth water :) Well then, let's get cooking! The dish is ready to be served.

    First, clean the artichokes. They should look like the ones in the photo.

    Pour about 2/3 cup of olive oil into a large baking dish and place lamb cut into portion pieces.

    Squeeze the juice of three lemons over the lamb, season with salt and pepper, and mix well. Cover the baking tray with foil and place in the oven for 1 hour at approximately 220 degrees Celsius.

    In Crete, it looks like this—only home ovens are used, but if you really want, you can try preparing the dish in a kitchen oven.

    While the lamb is in the oven, prepare the artichokes. Sprinkle the cleaned artichokes with lemon juice, pour 1/3 cup of olive oil, add salt and pepper.

    When the lamb has already stood in the oven for one hour, take it out, add artichokes together with lemon juice, pour a little (half a cup) of warm water into the baking tray, cover with foil, and continue roasting for another hour and a half in the oven at the same temperature.

    Lamb with artichokes is best served with olives and rakia. Aaah, how delicious everything looks in the photo, it's making my mouth water :)
