
Lamb à la Baidarka
Description
This recipe won't take much time. To prepare this dish, buy a good piece of boneless lamb at the market. 1. Rinse the lamb. Cut the meat into pieces and remove any membranes. 2. Peel the onion and chop it coarsely. 3. In a large bowl, mix the meat with the onion. Add vinegar, salt, and pepper to taste. Stir well and let marinate for 5–6 hours in the refrigerator. Cover the bowl with plastic wrap or a lid. 4. Sear the marinated meat together with the marinade in a small amount of fat (pork fat works well) over medium-high heat until browned. Use a skillet with high sides, as you'll be adding broth later. 5. Then add broth to the skillet with the meat and simmer over low heat, covered, until tender. The cooked meat should be soft. 6. Prepare the sauce: crush the garlic using a garlic press and mix it with tomato sauce. Sprinkle the cooked lamb with fresh herbs and serve hot with the prepared sauce.
