Boiled Armenian-style lamb

Description

The recipe won't take much time. As far as I know, the classic Armenian boiled lamb recipe is also known by another name—hashlama, I believe. Similar simple recipes exist in every cuisine. The only difference lies in the herbs and spices, don't you think? So here's my simple Armenian-style boiled lamb recipe, where I've intentionally left out specific spices—because they can be whatever you like! I highly recommend you try it. Serve hot.

    1. Cut the meat into pieces and fry in vegetable oil on both sides until a golden crust forms.

    2. Now add the meat to the remaining oil, along with pieces of carrot, garlic, and onion. Pour in boiling water to just cover the meat, and place over heat. When it comes to a boil again, add salt and spices.

    3. Cook the meat over low heat, covered, for three hours, until the meat easily separates from the bone. Serve meat pieces with the broth as a sauce.
