
Steamed lamb
Description
To prepare lamb steamed: cut the meat into pieces, season with salt and pepper, add a little cumin, and let marinate for 1 hour. Prepare a thick sauce from wine, vinegar, and sugar. Coarsely chop the vegetables. Place a pot over heat, and when the water boils, add the ingredients in the following order: first, branches of archi. If you cannot find coniferous archi branches, substitute them with rosemary sprigs. Then add a layer of potatoes, followed by carrots, and place the meat on top. Steam for 2 hours, then serve hot with the sauce.

And on top, place the lamb. You can add a few sprigs of rosemary to it. Steam for 2 hours, then serve hot with sauce.
