
Lamb curry
Description
The dish is prepared without unnecessary complications. Lamb curry is a great treat for guests. It's hearty, delicious, and served with its own sauce. It goes well with mashed potatoes. You can also serve it with whole boiled potatoes or simply a filling salad, such as Olivier or crab salad. I cook this dish on weekends, as it takes about two hours. But the result is absolutely delicious. The finished dish can be served at the table.

Prepare the lamb. Cut it into equal small pieces.

Mix the spices: cardamom, cinnamon, cloves, coriander, cumin, chili pepper, salt, pepper. Set aside in a bowl. Then finely chop the onion, add minced garlic, ginger, pour in water, and mix everything together.

Melt the butter in a high-sided skillet. Place the meat in it. Fry each piece evenly on both sides.

When the meat has changed color, add the liquid mixture and spices. Mix well.

Simmer the meat with spices and onion for five minutes.

Finely chop the tomatoes. Add them to the meat along with the tomato sauce (or paste). Mix well. Cover with a lid and simmer over low heat for about an hour and a half.

After an hour and a half, test the meat with a fork. If it is still tough, cover with a lid and simmer for another 30 minutes. Your dish is ready!
