
Lamb ribs with pistachio tapenade
Description
The recipe won't take much time. Tapenade is a thick French paste made from olives, anchovies, and capers. Serve hot.

1. To make pistachio tapenade, combine pistachios, olives, capers, garlic, oregano, and parsley in a food processor. While the processor is running, slowly drizzle in the olive oil. Add lemon zest and pulse to combine, adding more oil if necessary. Set the tapenade aside.

2. Season the ribs thoroughly on both sides with salt and ground black pepper. Let them sit for 10–15 minutes. Preheat the oven to 220 degrees. Heat olive oil in a large skillet over high heat. Add the ribs and sear for about 2 minutes on each side, until browned. If the ribs brown too quickly, reduce the heat. The meat should be caramelized on both sides.

3. Place the ribs on a baking sheet lined with parchment paper and spread tapenade on top. Put the baking sheet in the preheated oven and bake the ribs for 4 to 5 minutes.
