Wash the lamb rib rack and dry it with paper towels. Trim off excess fat and cut the meat into portion-sized pieces along the ribs.

Rub the lamb rib pieces with a mixture of salt and white pepper. Then drizzle with olive oil and let marinate in the refrigerator for a couple of hours, or preferably overnight.

While the lamb is marinating in the refrigerator, prepare a spice mixture for it. To do this, crush cumin, coriander, cloves, cinnamon, and black peppercorns in a mortar, then add a pinch of ground red pepper.

Take the marinated meat out of the refrigerator and pat it dry with paper towels. Rub the meat with the prepared spices and place it on the grill rack. Then grill the ribs for ten minutes on each side.
