
Hutsul-style banosh

1. For cooking, you will need a saucepan with a thick bottom or a cauldron so that the porridge doesn't burn but simmers gently. Pour in the milk and place over heat.

2. Prepare the grain and salt to taste. No other spices! Banosh will only be supplemented with toppings (to your taste) before serving.

3. The milk should not boil, but only be warmed. At this stage, add the grain and salt.

4. Cook the banosh over low heat for about 15 minutes. Stir constantly with a wooden spatula, but only in one direction! As you can see, the porridge should easily pull away from the sides of the pot. At the end, add sour cream. By the way, you can also use sour cream to adjust the thickness of the banosh.

5. Carefully mix everything, remove from heat, and serve immediately. This version is banosh with cracklings, but I highly recommend trying it with brinza cheese as well.
