Bulgarian-style banitsa made with lavash

Description

Perfectly pairs with tea and coffee. This recipe won me over with its simplicity, versatility, and, most importantly, the result—a delicious and satisfying dish. You can prepare it with fillings of cottage cheese, meat, or vegetables. Thanks to thin Armenian lavash, the preparation takes no more than 1 hour. Serve warm or chilled. Ideal with tea.

    1. I use homemade cottage cheese, but store-bought works too—mash it with a fork.

    2. I wash the herbs (I have dill, but you can use parsley, cilantro, or green onion) and dry them with paper towels, then finely chop.

    3. Place the cottage cheese and herbs into the blender container, add a little salt and ground white pepper, blend, then add 1 egg and 50 grams of sour cream.

    4. I line the baking pan with parchment paper and grease it with butter.

    5. Unroll both lavash sheets, distribute the cottage cheese filling between them, and spread it evenly over the entire surface.

    6. Roll both lavash tightly into a roll, coil them into a spiral, and place the first lavash in the center.

    7. I wrap the first lavash with the second one; you can arrange them however you like.

    8. Mix the remaining sour cream with water, add 2 eggs, salt, and spices, then beat everything together. Pour this mixture over the lavash in the baking dish.
