
Bulgarian Banitsa
Description
Bulgarian banitsa is a fairly simple but extremely tasty appetizer. There are quite a few variations on how to make it, but I recommend trying this recipe in particular. If you like it, you can certainly experiment and add something new. It can be served warm or chilled.

1. First, prepare a very simple filling. In a small bowl, beat the eggs with a fork. Add baking soda to plain natural yogurt with no additives and mix. Lightly mash the feta. Combine the eggs, yogurt, and feta and mix thoroughly. Salting the filling is not recommended, but you can add ground pepper, for example. If you do not have feta on hand, cottage cheese can be used instead.

2. The classic Bulgarian banitsa recipe calls for filo dough. If you cannot find it, you can use puff pastry instead. Lightly grease the bottom of an ovenproof dish with vegetable oil and place a sheet of dough.

3. Spread a little filling on the dough, about 4 tablespoons (depending on the size of the pan). Spread evenly over the entire surface.

4. Treat all the filling and all the dough the same way. The final layer should be dough. Brush the top lightly with vegetable oil or butter so that the homemade Bulgarian banitsa has a golden crust.

5. Place the baking dish in a preheated oven for about 35–40 minutes. When the crust is golden brown, the banitsa is ready to take out.

6. Immediately after this, lightly spray the top with water and cover with a clean towel. The banitsa should rest for another 15–20 minutes. Then it can be cut into portion-sized pieces and served.
