Banana Tarte Tatin

Description

It will be perfect with tea and coffee. At the beginning of the recipe I stated that this recipe is from Gordon Ramsay, the only difference between my tart and the original is that Gordon Ramsay used a whole vanilla pod, which he placed on top of the tarte Tatin after first removing its most valuable part – the seeds, which he added to the sugar. I replaced the vanilla pod with anise, and added powdered sugar to the granulated sugar, which I have prepared with a real vanilla pod; otherwise the entire recipe is followed exactly. Serve cooled or slightly warm.

    Prepare the ingredients according to the recipe.

    In a skillet with a removable handle, crush the butter with your fingers and place it in the freezer for a few minutes until the butter hardens.

    On top of the butter, arrange the star anise and sprinkle with a mixture of ground pepper; leave a little pepper on the bottom of the pie. If you have whole peppercorns, they need to be ground in a mortar. You can also use a ready-made pepper blend, like I do.

    Mix granulated sugar with vanilla sugar.

    Sprinkle the sugar with vanilla over the butter.

    Cut the bananas into small even pieces.

    Place the bananas on top of the pan, and as you arrange the banana pieces, press the gaps between them together so they are more tightly packed against each other.

    Roll out the puff pastry into a sheet 4–5 mm thick, then cut a circle from the dough slightly larger in diameter than the skillet.

    With your fingers, try to gently knead the edge of the dough so that it becomes thinner.

    Place the pan over medium heat so the sugar can caramelize. When caramel-colored bubbles appear around the edges, you can put the pie in the oven, which at that time has already been preheated to 200 degrees.
