
Banana pie
Description
Perfect with tea and coffee. The cake turns out very large, so feel free to halve the ingredient quantities if you don't plan to serve many guests. Use bananas of medium ripeness, and mash them either with a fork or using a blender. Don't be alarmed if the baked cake looks slightly dark—this is typical for banana-based batter. Be sure to prepare the crumb topping—streusel: it creates a delicious crunchy crust on top of the cake. Serve warm or chilled. Ideal with tea.

1. Prepare the dough: using a mixer, beat the eggs with sugar and vanilla sugar until fluffy and white. Mash the bananas with a fork or blender and add to the egg mixture.

2. Add the melted and slightly cooled butter. Alternately add the flour with baking powder and milk in several batches.

3. Prepare the crumb: rub the flour and sugar with your hands together with the butter until it turns into crumbs. Line a 24x24 cm pan with parchment paper and spread half of the mixture evenly on the bottom.

4. On top, spread half of the crumb mixture, then again the dough, and top with the remaining crumbs. Bake in a preheated oven at 180 degrees for 1 hour. Let cool completely.
