First, we'll prepare the base for the cheesecake. To do this, grind the cookies using a meat grinder, blender, or crush them with a rolling pin.

Mix the melted butter and cookie crumbs, stirring well. Transfer this mixture into a baking pan, pressing it firmly to cover the entire surface.

We peel ripe bananas and blend them into a puree, then add mascarpone to the banana puree. Blend again until a smooth, homogeneous mixture is obtained.

Pour water into a saucepan, add sugar and agar-agar. Place the mixture on the stove and, stirring, bring to a boil.
