
Banana donuts in glaze
Description
The recipe won't take much time. This recipe yields 3 dozen doughnuts. Colorful doughnuts are a perfect dish for a children's party. Serve chilled.

1. Preheat the oven to 175 degrees. Lightly spray a non-stick skillet with oil. Place walnuts on a baking sheet and bake for 10 minutes. Let cool, then chop. Mash bananas in a bowl with a fork. You will need 1/2 cup of banana puree; set aside the remainder for another use. Mix buttermilk and vanilla extract with 1/2 cup of banana puree and set aside.

2. In a small bowl, combine flour, baking soda, and baking powder; set aside. In a large bowl, use a mixer to beat butter and sugar together. Add the egg and beat. Add one-third of the flour mixture and mix at low speed. Add half of the banana mixture and blend. Add the remaining flour and banana mixture alternately, ending with flour. Stir in chopped walnuts and coconut flakes.

3. Pour the batter into a pastry bag with a wide tip. Squeeze out donuts onto a preheated pan and cook for 10 minutes, until golden brown. Let cool on a wire rack.

4. Make the glaze. In a small bowl, whisk together powdered sugar, milk, and vanilla extract. Add more milk if needed until desired consistency is reached. Add food coloring if desired. Dip the finished donuts into the glaze and place them on a rack to let excess drip off. Add sprinkles if desired.
