
Dietary Banana Pancakes
Description
To make diet banana pancakes, you'll need a ripe sweet banana, quick-cooking oat flakes (or a mix of cereal flakes), eggs, and a little milk. Place all ingredients into the bowl of a stationary blender or use an immersion blender—just make sure the pancake batter is smooth and uniform. Alternatively, you can grind the oat flakes separately in a coffee grinder and then mix them with the other ingredients; the result will be the same. See all the details in my step-by-step recipe. Prepare the ingredients, let's get started!

Place all the ingredients at once into a tall mixing bowl: peeled banana, eggs, milk, oats.

Blend the mixture with an immersion blender for 3-4 minutes, no less, until the dough becomes smooth and airy.

Heat a non-stick pan; pancakes should be cooked dry. Pour a little batter into the center using a ladle, and cook over low heat for 1–2 minutes, depending on your pan.

Flip with a spatula and sear on the other side. Don't be alarmed by the dark color—it's due to the banana.
