
Banana muffins with candied fruits
Description
Tender banana muffins with a wonderful aroma and flavor, moderately sweet and rich, featuring the characteristic moist crumb typical of banana baked goods. To make banana muffins, simply add a fork-mashed banana to the regular batter—you can even use slightly overripe bananas, as they are usually sweeter and more aromatic. There's no need to puree the banana flesh: too liquid a batter may not bake through properly. On the contrary, a slightly coarse mixture with small banana pieces will give the muffins a tender texture and juiciness.

1. Using a fork, mash the ripe bananas into a puree.

2. Add butter, baking powder, salt, and baking soda to the banana puree. Add eggs and sugar, then beat everything until smooth using a mixer.
