
Banana muffins with cinnamon
Description
The baked goods are easy and quick to make. If you plan to take the cupcakes with you on a trip or to a picnic, do not top them with frosting; instead, put the frosting in a small container or jar and take it with you. The cupcakes are delicious hot or cold with milk, tea, or coffee. You can also serve them with tea or coffee.

Prepare the specified ingredients.

Peel the bananas and break them into a deep bowl. Mash with a fork. It is best to use slightly overripe fruit — they are sweeter.

Into the bowl of a stand mixer, crack two chicken eggs, add salt and sugar. Beat everything for about 3–5 minutes until light and fluffy.

Add ground cinnamon and banana puree and gently mix everything together.

Melt the butter, pour it into the egg mixture, stir, then add the wheat flour and baking powder. Gently fold in the dry ingredients with a silicone spatula or whisk.

Preheat the oven to 180 degrees. Put the dough into silicone molds. If you use metal molds, grease them with oil.

Bake the cupcakes in the oven for about 15–20 minutes until golden. Then remove them and let cool.
