
Banana pancakes with a golden crust
Description
The bake comes together simply and quickly. Golden pancakes with banana caramelized on top are ideal for breakfast and for a midday snack alike, especially with warm milk, hot tea, or coffee. Try not to overload the pancakes with banana slices, or you won’t be able to flip them. The bake is ready. Serve at the table.

Prepare the listed ingredients.

Whisk the chicken eggs with water, sugar, and salt. Sift in the wheat flour and whisk again, taking care not to form lumps.

Peel the banana, dice half the fruit into small cubes and add to the batter. Pour in 30 ml of vegetable oil and mix. Let the batter rest for 10 minutes, and slice the remaining half of the banana into thin slices. Make them thin on purpose so they don’t weigh down the baked good.

Heat the frying pan and grease it with vegetable oil. Pour in some of the batter and swirl the pan so it spreads into a pancake.

Quickly place 3–4 banana slices in the batter before it has set. Fry the pancake on one side for about 1–2 minutes over medium heat. Then carefully flip it over and fry for the same amount of time.

Before you cook each pancake, grease the pan with vegetable oil, or the banana slices will stick to the pan. Cook all the pancakes.

Serve them warm with tea or coffee, with jam or jelly.
