
Banana oatmeal pie
Description
If you want the pie to be fully healthy-eating (clean eating) compliant, omit the sugar from the recipe—the bananas are sweet enough on their own. I baked this pie both with sugar and without, and I like both versions.

Prepare all ingredients before you begin cooking.

Put all the flakes and sugar into the blender’s roomy jar.

Run the device for 20–30 seconds. You don’t need to grind the flakes into flour, so you shouldn’t run the blender for long.

Rinse the bananas under running water and peel them. Cut the banana flesh into small pieces for convenience.

Place the banana pieces in the blender jar with the ground oats and sugar, and crack the eggs into the same jar.

In the end you should have a thick, uniform oat dough. Transfer it to a roomy bowl and add baking powder. Mix.

Then transfer the finished dough into a handy baking tin, leveling it with a spoon — I use a 20 cm silicone tin. Bake the pie in an oven preheated to 180 °C for 35–40 minutes.

Remove the baked pie from the tin and place it on a wire rack to cool.

If you like, dust the pie with confectioners’ sugar.
