
Banana-Lemon Muffins
Description
The recipe won't take much time. You can bake muffins in silicone, metal, or paper molds. If you'd like to decorate the pastries, make a frosting using butter or whipped cream, or fill them with jam, fruit, or condensed milk. Experiment! Serve cooled or slightly warm.

1. Sift the flour, baking soda, and salt into a bowl. Using a food processor, beat the butter, sugar, and lemon zest until fluffy, about 3 minutes.

2. Blend the peeled bananas, eggs, yogurt, and lemon juice in a blender until smooth.

3. Pour 1/3 of the banana mixture into the container with the oil, and beat everything with a mixer.

4. Add half of the flour mixture to the mixer and blend at the lowest speed. Continue alternately adding the flour and the banana mixture until everything is well combined.

5. Preheat the oven to 190 degrees. Place the batter into muffin molds; this amount will make 12 muffins. Put the muffin pan in the oven and bake for 20–25 minutes, until golden brown.

6. Remove the cupcakes from the oven and let cool. Serve the muffins warm.
