Description
Perfect for the table and with drinks. I highly recommend making homemade pork balyk—it will please not only your family but all your guests (if you’re preparing it for a holiday table). It is cured for 15 days in a cool place (on the balcony, in the refrigerator), but first it is steeped in salt. Serve with herbs and sauce.

1. The main requirement for making this appetizer is fresh tenderloin. Take a tray or a deep container and pour salt into it. Place the meat in it and coat it on all sides, covering it with salt. Then refrigerate for 24 hours.

2. When you remove the meat, you will see how the salt has absorbed the excess liquid.

3. Remove the salt from the meat and coat it in spices to taste. Then wrap the tenderloin in cheesecloth and hang it in the refrigerator vertically for 15 days. The bandage must remain clean throughout the entire curing period.

4. And that's it—our pork balyk is ready! If you want the meat to be spicy, use special seasonings.
