Description
This appetizer is quick and easy to prepare. Here is a classic recipe for making pork balyk. Rinse and pat dry the meat. Then place it in an oblong container and coat it with salt on all sides. Place the meat under a weight in the refrigerator for 3 days.

Turn the meat over from time to time so it salts evenly on all sides.

After 3–4 days, remove the meat and pat it thoroughly dry with a towel until it is dry. Rub the pork with garlic, paprika, coriander, and pepper.

Wrap the meat in cheesecloth or thin fabric. Tie it tightly with string on top and hang in a warm, well-ventilated place for 5 days.
