And there it was—this fish ended up in my hands. I decided to turn it into a tasty appetizer for the holiday table. Specifically, I’ll share with you the recipe for it. Serve with greens and sauce.

    Pour a 1 cm layer of salt into a glass dish. Place the fillet on top and cover it with salt.

    Put the fish in the refrigerator for a week. After that, rinse it under running water.

    Then cut the sterlet into pieces. Hang them on twine or string in a dry place for 1–2 days.
